History of Shabu Shabu

During World War II, Mr. Shoya Yoshida, a native of Tottori Prefecture and a leader of the folk art movement, was posted to Beijing as a doctor, where he encountered “Huang mutton”, which is said to be the prototype of shabu-shabu. Shwan yanglou (pronounced “shwan yanglou”) means “rinse” and yanglou means “mutton.” It is a Beijing specialty hotpot dish in which thinly sliced mutton is quickly dipped in soup.

After the end of the war, Mr. Shoya Yoshida returned to Japan and told his friend, Junidanya, a Japanese restaurant in Gion, Kyoto, about the pork. Therefore, “beef mizutaki” was devised by adapting it to Japanese tastes.

This dish became popular and spread throughout the Kansai region, and the Eirakucho Suehiro main store in Osaka named it “shabu-shabu.”The name came from the fact that “the way the employees wash the towels was similar to the way they dipped the beef into the soup stock,”so the word “shabu-shabu” comes from the sound you hear.
